Ingredients

  • 500 g tipo 00 flour
  • 325 g water
  • 15 g yeast
  • 2 tbsp olive oil
  • 15 g salt

Directions

  1. Add all ingredients except the salt to a mixing bowl and knead thoroughly for about 7-10 minutes. Add the salt and knead for another 5 minutes.
  2. Cover and let the dough rise at room temperature for about 1 hour until doubled in size.
  3. Punch down the dough and divide into 10-12 balls. Let them rest for 20 minutes so the gluten relaxes and becomes easier to work with.
  4. Roll them thin - about 3 mm thick - and bake immediately in the pizza oven. The oven should be around 300°C with a thoroughly heated stone. Bake until lightly golden brown and puffed up. They should still be soft and flexible so they can be filled with your favorite ingredients.
