Dry aging is a time-honored technique that enriches meat flavor and tenderness. The Witt cabinet allows you to achieve this at home, releasing lactic acid for less acidity and more umami. Simply hang the meat on included hooks, and when it loses 30% of its weight, it's ready for cooking.

The cabinet maintains optimal conditions with a temperature range of 1-3°C and humidity between 65-75%, recommended at 2°C and 70%. A water container ensures automatic humidity control. Once aged, trim the dehydrated sides for a rich sauce, and cook the meat to your preference, whether grilling, roasting, or sous vide.
