Ingredients

  • 12 langoustines
  • 1 organic lemon
  • 4 tbsp olive oil
  • 1 handful dill
  • 1 garlic clove
  • 10 almonds
  • 1 anchovy fillet

Directions

  1. Crush the dill, garlic, and almonds in a mortar until well combined. Add finely grated lemon zest and the anchovy fillet.
  2. Stir in the olive oil and season carefully if needed.
  3. Split the langoustines lengthwise and arrange them in an ovenproof dish. Quarter the lemon and place it alongside.
  4. Season lightly with salt and pepper.
  5. Preheat the oven to 300°C. Bake the langoustines for 1-2 minutes depending on size. The meat should turn opaque white.
  6. Spoon over the pesto or serve it on the side with bread and grilled lemons.
