Description

The Witt SA6082-1BG is a black built-under cabinet designed for dry aging meat in a single zone. It features humidity control to maintain the ideal environment for dry aging, ensuring a perfect balance for flavor and tenderness. The cabinet's UV sterilizing light protects the meat throughout the aging process.

Dry aging enhances meat flavor and tenderness by allowing lactic acid to release, reducing acidity and increasing umami. The cabinet maintains a temperature of 1-3°C and 65-75% humidity, with a recommended setting of 2°C and 70%. The automatic humidity control and water tank ensure optimal conditions for aging.

The cabinet includes a water tank, three hanging hooks, a steel grate, and a salt tray, making it easy to dry age meat at home. Once the meat loses about 30% of its weight, it's ready for cooking. This process, previously difficult to achieve at home, is now accessible with the Witt SA6082-1BG, offering a professional dry aging experience.
