Ingredients

  • 100 g lard (can be replaced with butter)
  • 350 g Manitoba flour
  • 150 g durum wheat flour
  • 250 g boiling water
  • 15 g salt

Directions

  1. Combine both flours, salt, and lard in a bowl. Rub the fat into the flour until the mixture has a sandy texture.
  2. Gradually add the boiling water. Be careful - it’s very hot. Alternatively, use a stand mixer or food processor.
  3. Once the water is incorporated, knead the dough for 5-6 minutes.
  4. For tacos divide the dough into 15 equal balls. Cover and refrigerate for 30 minutes. For wraps or burritos, make larger dough balls.
  5. Roll them out as thinly as possible and bake in a well-preheated 400°C pizza oven.
  6. Flip after about 15 seconds to help them puff up. Flip again after another 15 seconds. Remove once puffed and lightly colored.
  7. Keep covered with a cloth to stay soft.
